Not only does this book provide a great view of eating healthy, it provides easy, inexpensive recipes that my family will actually eat. We are not tofu eaters (although there are some tofu recipes), we are not vegetarians, and we are certainly not gourmet cooks - but we do want to eat healthy. This is the first healthy eating cookbook that I have found more than a handful of recipes I could make for my family.
