All too often it's difficult finding that happy medium between what you enjoy and what is more healthy and with this book you not only get started out with many many great recipes but Chef Coleman also takes you step by step behind the substitutions that allow no changes in flavors and textures. The photographs are awesome and the instructions easy to follow. If you cant get to the Rittenhouse this is definitely the next best thing!
